I made this carrot cake for a recent dinner party, and though we were all full after a fabulous meal, most folks tried at least a slice and gave it the thumbs up.
Bringing the leftovers home, my kids gave it the BIG thumbs up.
This was all that was left of Kathy Trochek’s AKA Mary Kay Andrews mother’s famous carrot cake.
If you don’t know or read any Mary Kay Andrews books, you should. She’s got a wonderful sense of humor and writes fun characters in great settings. I always want to go junkin’ or cook something after I read one of her books.
